A different version of cheesecake! An easy-to-make recipe for a delicious, fluffy cheesecake with notes of kum quat!
250gr. Biscuits (digestive type) broken into pieces
100gr. melted butter
300gr. cream cheese (type Philadelphia cheese)
250gr. heavy cream
1 tbsp zest of kum quat and orange mixed.
1. In a 20cm springform pan mix and press all the base ingredients, so that the surface becomes flat. Chill in the freezer, uncovered, for 10 minutes or so.
2. Whisk together the cheese, the flour and sugar. Slowly mix the eggs one at a time and then the cream until the filing is well blended but fluffy.
3. Pour the filling into the baked crust and bake in a preheated oven at 180 degrees for 1 hour.
4. Garnish with candied pieces of orange and slices of fresh kumquat.
